
Huevos rancheros and fried potatoes!
One of my favorite meals in the world is huevos rancheros, which is Spanish for whale’s vagina. Ok… maybe it is Spanish for ranch eggs, but regardless, they are good. I discovered this meal when I went on a trip to Honduras and Guatemala with my little brother a couple of years ago. It is a dish that is very popular in Mexico and consists of fried eggs served on a corn tortilla with a tomato-based sauce. It is usually served with refried beans and guacamole too! I was very delighted when I saw it on the menu at Joe T. Garcia’s Mexican Restaurant in Fort Worth, Texas.

Fort Worth. I was really excited when I saw that my huevos rancheros came with fried potatoes! The day just kept getting better. Hooray!

My meal was amazing. The potatoes were fried to perfection. They were made with peppers, tomatoes, onions and I couldn’t have been happier. The potatoes were seasoned just right. They were crispy without being burnt. Yum yum in my tum tum.

The excitement didn’t stop there… no siree. After an early lunch at Joe T. Garcia’s, we headed to the Fort Worth Stockyards. We saw a cattle drive, real cowboys, a mechanical bull and we even rode a train from the 1800s. We walked away sweating from the Texas heat and I swear the smell of cow was lingering in our clothes. It was a fun day though. Overall, I had an amazing time with my parents and Jason. The food was good and the company was even better. I am one lucky fairy.
